Description
The AOC Aix-en-Provence requires a blend of at least 2 varieties of olives from Provence. We are therefore here on a mono-varietal oil (as a varietal wine could be). Only the Aglandau olive variety is pressed for this oil, which gives it raw characteristics that respect the fruit.
The Aglandau is the queen variety of olives in the country of Aix-en-Provence. It guarantees a intense and very fruity oil, balanced, with a slight bitterness.
In a deep green dress, it gives off varied aromas on the nose and on the palate, such as fresh grass, fresh artichoke, the tomato see you, hawthorn, the Basilic, flat-leaf parsley, green banana, spinach, almond and hazelnut with a final note in the mouth of walnut and peanut. An oil with character !
Gastronomic olive oil pairings
Ideal for salad dishes, tabbouleh, pasta salads, this oil is recommended on ratatouilles and other vegetable tians. It goes well with many white-fleshed fish and with many pies.
It is the ideal olive oil for anchoïades and aioli.
