Chez Chateau Virant, emblematic land of green fruitiness, the house has chosen to revisit ancestral know-how : the production of a virgin olive oil with matured olives, also called old fashioned taste.
This traditional method is based on a natural and controlled fermentation olives, which reveals deep and captivating aromas of Black tapenade, cocoa and undergrowth.
The result ? One oil at a time gentle, round and complex, a true tribute to the culinary memory of the Mediterranean.
Health, terroir and authenticity
Labeled Olive Oil from France, this oil comes exclusively from orchards of La Fare-les-Oliviers et Sandeel of Provence, grown according to the demanding principles of certification HVE3 (High Environmental Value).
Each bottle bears witness to a artisanal mastery, of a perfect traceability, and a deep respect for nature.
Development and characteristics
The olives, hand-picked in October, are carefully sorted before being stored between 4 et 10 days under controlled conditions, allowing perfect maturation.
They are then crushed, kneaded, and cold pressed to extract an oil of golden color with brown highlights, of a remarkable aromatic intensity.
