Clos Victoire rosé emanates from the vibrant heart of Provence, offering a taste experience that captures the essence of the famous terroir of Chateau Calissanne. This wine illustrates the perfect harmony between ancestral know-how and the generosity of preserved nature., offering an invitation to savor the richness of the region.
Winemaking and terroir : A marriage of tradition and innovation
Made from a rigorous selection of Grenache and Syrah, Clos Victoire rosé benefits from careful vinification, aimed at preserving the freshness and aromatic intensity of the grape varieties. The unique combination of limestone and clay soils located in the North West of the domain Calisanne, under the generous sun of Provence, gives this rosé its distinctive character and elegance.
Harvested at optimal maturity, the grapes are crushed then put in vats for maceration for a few hours, as is customary for “a saignée rosé”.
After juice clarification (“settling”), the alcoholic fermentation is carried out at a controlled temperature (16 to 18 °C) pendant 15 days. In order to preserve a greater freshness in the wine, malolactic fermentation is not carried out.
