Blending and vinification : Exceptional know-how
The vines are located in the North West of the domain Calisanne, on a south-facing plot, on limestone scree soil.
Fruit of a rigorous selection of Grenache, Cinsault and Syrah, Calisson rosé wine from Calissanne benefits from a night harvest and careful vinification. This approach guarantees the freshness and aromatic intensity of this exceptional wine.
The harvest is carried out at the end of August on the oldest vines of the estate by a manual harvest.. The juices are gently extracted in the absence of oxygen thanks to a press using the latest technology..
After cold settling (stable) several weeks, vinification takes place at 15 °C in thermo-regulated tanks.
