Circuit court
All olives are grown and pressed in Provence right next to their harvest location. The time between olive picking and pressing oil mill being a determining factor in the quality, you have the assurance that your oil will not come from Tunisian olives, Moroccan, Greek or Spanish. Our oils do not contain any olives that have crossed Europe or the Mediterranean in containers before being pressed in Provence(see retail oil).

Different olive oils

The green fruitiness comes from the green olive, ideal for seasoning. Its taste of freshly cut grass or artichoke and an aftertaste of pepper on the finish make it a very high quality oil..
Ripe fruit comes from the same olives, but these were placed in the cellar to bring them to maturity before pressing. We are here on prestigious oils which will be used rather at the end of cooking on a risotto, vegetables, meat or fish. The taste dominance is completely different and is similar to tapenade and cooked fruit.
It is therefore essential to have in your kitchen a fruity green and a fruity black.
