All olives are grown and pressed in Provence right next to their harvest location. Our oils do not contain any olives that have crossed Europe or the Mediterranean in containers before being pressed in Provence(see retail oil).

Ripe fruit comes from the same olives, but these were placed in the cellar to bring them to maturity before pressing. We are here on prestigious oils which will be used rather at the end of cooking on a risotto, vegetables, meat or fish. The taste dominance is completely different and is similar to tapenade and cooked fruit.

It is therefore essential to have in your kitchen a fruity green and a fruity black.
