At the foot of the castle of Les Baux de Provence, Moulin Castiles produces a truffle flavored olive oil, a very mild oil with truffle flavors.
Truffle flavored oil
This flavored olive oil differs from anything commercially available because it is not an infused oil.. In effect, Moulin Castelas adds natural black truffle flavors to their premium oil. The truffle cannot be crushed, the process differs from other flavored oils. The organic aromatics added during the grinding give the’Castile oil an amazing aroma. A few drops of aromatic truffle oil on mashed potatoes, an omelet or roast meat and your simplest dishes will be transformed into a gourmet dish !
Here are some ideas for using truffle flavored olive oil :
- salad dressing : mix truffle flavored olive oil with olive oil and balsamic vinegar to make a truffle vinaigrette. Spread it over a mesclun and parmesan salad or a vegetable pasta salad.
- Filling for sandwiches : spread truffle-flavoured olive oil on country bread and garnish with tomato slices, of ham and mozzarella to prepare truffle panini sandwiches.
- Dressing for grilled vegetables : mix truffle flavored olive oil with olive oil and balsamic vinegar to make a truffle dressing. Drizzle over grilled vegetables before serving.
- Sauce for meat or fish : use truffle flavored olive oil to prepare a sauce to accompany grilled meats or fish. You can also use it to season pasta or risotto.
Moulin Castiles
Le Castelas mill in Les Baux de Provence was built in 2002 to control the entire chain in the production of olive oil. The joint work of the olive grower and the millers makes it possible to design oils of very high quality combining tradition and modernity with a mill designed with the most efficient tools to extract the nectar from the olive..
The domain matters 45 hectares of olive trees on the slopes of the Alpilles, including varieties of’AOP Valley of Les Baux de Provence : Salonenque, Aglandau, Grossane and Verdale. A large part of the orchard is in organic farming without any chemical or synthetic products. The olive trees are treated with Kaolin, a natural white clay mixed with water, in order to disorient “Fly”, main disease of olive trees in Provence.
