Matured olive oil flavored with black garlic

In effect, Moulin Castelas adds black garlic directly to the olives during crushing and oil extraction. No natural or artificial flavoring is added. Moulin Castiles
Le Castelas mill in Les Baux de Provence was built in 2002 to control the entire chain in the production of olive oil. The joint work of the olive grower and the millers makes it possible to design oils of very high quality combining tradition and modernity with a mill designed with the most efficient tools to extract the nectar from the olive..
The domain matters 45 hectares of olive trees on the slopes of the Alpilles, including varieties of’AOP Valley of Les Baux de Provence : Salonenque, Aglandau, Grossane and Verdale. A large part of the orchard is in organic farming without any chemical or synthetic products. The olive trees are treated with Kaolin, a natural white clay mixed with water, in order to disorient “Fly”, main disease of olive trees in Provence.
