The AOC Aix-en-Provence requires a blend of at least 2 varieties of olives from Provence for the manufacture of Salonenque olive oil Château-Virant. So here we are on a mono-varietal oil (as a varietal wine could be). Only the Salonenque olive variety is pressed for this soft and delicate oil.
The Salonenque is the queen variety of olives in the land of Salon-de-Provence, hence its name. It guarantees a soft oil with a delicate vegetal fruitiness., artichoke flavors, almond, fresh apple, a buttery final note and a golden color.
Generally not bitter, Salonenque olive oil is very different from Aglandau in its sweetness.
