Alpilles oil mill
Located in Maussane-Les-Alpilles on the southern slope of the Baux de Provence massif, the Olive cooperative of the valley of Les Baux produces Moulin Jean-Marie Cornille olive oil. The olive mill received the distinction Living heritage company. The vaulted building of Moulin Jean-Marie Cornille was built between 1600 et 1620. Private property of the Lord of Manville, the mill became cooperative in 1924.
The Jean-Marie Cornille mill acquired with its famous olive oil with an old-fashioned taste, today called “matured olive oil“, a worldwide reputation, but did not neglect his fruity green. An oil that the greatest restaurants use for their recipes.
A.O.P. of the Valley of Les Baux
Olive oil A.O.P. of the Valley of Les Baux is made from five varieties of fruit. Each olive brings a specificity to finally give a soft and balanced oil.
- Main varieties : Salonenque, Beruguette, Coarse, Verdale.
- Secondary varieties : Picholine and some local varieties.
Secondary varieties cannot exceed 10% you are guarding.
