Located in Maussane-Les-Alpilles on the southern slope of the Baux de Provence massif, the Baux Valley Olive Cooperative produces Moulin Jean-Marie Cornille olive oil. The olive mill received the distinction Living heritage company. The vaulted building of Moulin Jean-Marie Cornille was built between 1600 et 1620. Private property of the Lord of Manville, the mill became cooperative in 1924.

The secret of Moulin Cornille’s matured olive oil !
Usually in all oil mills, matured olive oil is made from green olives which are stored away from light in large crates (boxes) at controlled temperature for a few days.
Le cornille mill has this particularity of storing the olives in the historic attic of the mill. This attic ventilated by the cool mistral of December allows the olive to ripen slowly during 4 to 5 days before being crushed then pressed.
